Overhauling a A65, A85 or similar from a manual?

Hello All,

I am about to begin a build of a Bearhawk LSA and will eventually need an engine and am doing a bit of research now. When the time comes I would like to find an engine with all its logs that is either ready to instal with a low time rebuild or perhaps one that may need an overhaul. I am curious since this is for an experimental, can the rebuild be done by myself with the help of an EAA member A&P to give guidance? The aerovee comes as a kit so how much harder is the rebuild of a continental? I assume that the downside would be perhaps the resale, but maybe I could get the A&P to sign off on it. It is an experimental after all so maybe I don't even need that?
