Options for legal UL with folding wings using the Hirth F23?

Greetings,

I want to build a truly legal UL, not just the wink wink nudge nudge type. The following is a list of requirement and preferences. The Kolb Firefly is #1 on my list, and actually the only thing on the list. Kolb isn't far away, so it's also a fairly convenient option for me, and I have previous Kolb experience. I just want to make sure I haven't missed some other option I should consider.

- Must use the Hirth F23
- Must have folding wings that can be realistically folded every time you fly if needed.
- Must be available in the US.
- Must have headroom for 6'-1" that's mostly neck.
- Must be at least partially enclosed (feet inside, windscreen)
- I prefer tractor configuration, but pusher is OK as well.
- I prefer to avoid wood or composite construction, but wood is hard to avoid and it's probably aircraft sacrilege to not like wood.
