Not strictly "homebuilt" but I though you might get inspiration from this
Dave Sykes a Paraplegic has set off to fly from the UK to OZ, some 12000 nautical miles in a Flexy Ultralight.. obviously taking his Whelchair with him strapped to the side!

He left Rufforth, Yorks yesterday, but wisely decided to turn back a few miles from the French Coast due to rain and fog causing a complete whiteout down to "ground level".

(we are only allowed to fly VFR and not at night.
He left the South of England again today and is now happily drinking "living it up" in France before the next leg.
