Wheels/brakes - size, and single or double puck?

Hey everyone,
The time to purchase wheels/brakes is nearly upon me, and I would appreciate your advice:

I am planning to buy Grove. I understand that single puck are good for 99% of applications, but double puck are required with larger tires. Where does that "larger tire" cutoff point take place??
Another thought - I want good stopping power, but not so much as to nose-stand the aeroplane if you jump on the brakes hard...

The Bearhawk is going to be running on 'bush' airstrips frequently, which are typically less than 1000' long, normally unmown tall grass with a rough or even slightly rutted surface condition. These tires aren't going on super rough riverbeds.

I was thinking that a 10" tailwheel, and 7.00x600 or 8.00x600 for the mains would be the most sensible size. Thoughts?
