Painting over a latex paint, what do I need to know?

Thinking about getting a LSA, and the paint is latex, and in good shape, but I just don't like the yellow color, and want to paint it a different color. Do I need to strip off all the old paint? Or can I just paint over top of it? What do you reccomend to paint with? I have a paint sprayer, but its use is for spraying paint on houses, not cars or airplanes. I have a fine tip, but don't know if I should paint it latex again, or if I should use an oil based paint.

I guess I don't really know much about painting an airplane. Can anyone help?
