As I'm a tall sasquatch kinda pilot wanna be I'm looking at some different 103 airplanes to potentially build.

One I keep coming back to is the Airbike. I'm sitting here in my desk chair trying to approximate my posture and distances to things like the top of the cockpit as well as distance to the footpegs and rudder pedals.

One thing that I'm trying to determine is how much pedal deflection off neutral is normal for a plane like this? Or am I over thinking this motion?

Thanks.
