Rebuild partially completed plane to 51%

I understand that to be an E/AB and get the repairman cert, the aircraft has to be AT LEAST 51% built by the owner.

If you buy a partially completed kit, with no documentation, this is hard to prove.

So, if I buy an unfinished project, and document my work up to 51%, its completely legal to reuse pre-built components from the purchased air frame (say the complete wings).

Would a DAR flip his lid? If you are building from plans, how hard do you think this would be to get to the 51% rule?
