Varnish Removal - What to use?

I will be modifying my wings to add flaps while I have them stripped for inspection. I will need to remove the varish from the wood where I need to glue new wood parts, but I can't find anything on what people are using.
The ribs are built up 1/4" x 3/16" spruce and the spars are solid spruce.

I came across this Varnish Remover and Paint Stripper - Refinisher and wondered if anyone has used it or what others are using to remove varnish. This stuff seems ideal since it doesn't effect the wood and should leave a good surface for gluing and refinishing.
