I don’t get header tanks …

Please help me, someone. I don’t understand why header tanks are commonly included in homebuilt projects. Like, the Cessna 152s and 172s I learned to fly in didn’t have them, so why are they necessary? Are they necessary? From my admittedly uninformed vantage point, it seems like they introduce a ton more complexity to the fuel system and make the build more difficult. Forgive if the question is kinda basic but I can’t seem to find an adequate answer out there. Huge thanks if someone could indulge me.
